Pre Heat Oven to 400F Lightly oil a medium sized pan.
For the "Chicken"
Blend vegan egg powder (Have a Heart Brand) with 2 C of cold water in a high speed blender for 30 seconds. Pour into a bowl and set aside.
Place an entire box of Love Grown Original Power O's into a large Ziplock bag or food processor. Blend or roll out cereal into a panko flour.
Pour homemade panko flour into a medium bowl.
Pour grape seed oil into the bowl with the panko and stir until evenly mixed.
Take a medium head of cauliflower and de-stem it. Cut cauliflower into bite size pieces. Cutting the stems and breaking the cauliflower by hand into bite size pieces works the best.
Dip the cauliflower into the vegan egg mixture. Make sure it is evenly coated and lightly shake off extra egg so its not dripping. Then dip the cauliflower into the homemade panko. Roll cauliflower in panko until its evenly coated and gently set it into your baking pan.
Place battered cauliflower in the oven on the top rack. Bake for 20 mins. Then broil until golden (about 3-4 minutes on high).
While the cauliflower is baking go ahead and start the sauce! Add all sauce ingredients except for the arrowroot starch and 1 Tbsp of water into a medium pot.
In a separate cup or small bowl mix 1 Tbsp of cold water with 1 Tbsp of arrowroot starch. Then pour the mixture into the pot with the other ingredients.
Turn the heat onto high and stir continually until you reach a full bubbling boil. Remove heat and set aside.
Place baked orange chicken on an inset dish and sprinkle with chopped green onions.
Then pour orange sauce over the baked cauliflower. Its best if you use a sauce bottle to control the flow. Let set for 10 mins while the sauce soaks into the battered cauliflower. Serve.
For a crunchy orange chicken do not pour sauce over cauliflower. Place sauce in a bowl and dip baked cauliflower into the sauce.
